  1. Kao Soi recipe is great but noodle to curry ratio way off. Frying 1 lb of noodles will puff up into 2 gallon bags full. I think you can either cut the noodles and chicken down to 1 lb, leave the rest the same and you will serve 4 people. Or if you want to serve 10 people and use 2 lbs of noodles, double your curry. I made this recipe as is and ran out of curry and had ginormous amounts of fried noodles left.
